This fabulous Mexican-inspired salsa is essentially based on tomatilloes, a small, green tomato which grows in Mexico. The addition of coriander and a blend of Serrano and Jalapeno peppers provides an interesting freshness to the overall result. It is best used with grilled meat, fish and turkey. However, we particularly enjoyed it with enchiladas.
